Using the power of Serebiis two raid pages, its ability to have literally every moveset for every raid Pokemon, and my personal experience with the raids I've done, I've come to write down what I think can be used for certain Pokemon. This will not be taking into account the Tera type of a Pokemon, only the pokemon themselves and the movesets they have.

Generally, please take into consideration the original typing of a Pokemon before selecting your Pokemon for a raid. For example, you encounter an Arboliva with the Fire typing. Despite the fact that you could indeed bring a Ground or Water type, you would most likely want to avoid those Pokemon types, as the Arboliva most certainly has a super effective move against those types. Additionally, certain pokemon like Pincurchin have the chance to have the ability Lightning Rod, which, provided it is a Flying or Water type, gives it a counter to the Electric moves that would usually be thrown at it.

Raids with increased chance of herbs (5 potential herbs max)
5 STAR: Gengar, Blissey, Glalie, Amoonguss, Eelektross, Palafin, Cetitan, Dondozo, Drifblim
6 STAR: Vaporeon, Blissey, Amoonguss, Cetitan, Dondozo, Farigarif

- IMPORTANT RAID POKEMON/MOVES -
Pokemon with Haze: Haze is a move that removes the opposing Pokemon's stat changes, which is extremely helpful in most, if not all raids, due to the fact that every pokemon is given up to 7 moves and a minimum of 4 moves, and usually has some sort of stat boosting move as an extra move. You don't have to worry about Haze targetting the Pokemon around you, as raids specifically seem to make it so usual AOE moves only hit the raid Pokemon.

Pokemon with Belly Drum: Pokemon with Belly Drum are some of the most important Pokemon for raids, there are even strategies with one of the new Pokemon, Iron Hands, where it can easily one shot 5 and potentially 6 star raids. Azumarill is another choice for belly drumming, and both Iron Hands and Azumarill have their reasons for being chosen, with your choice on which belly drummer to bring potentially being influnced by the pokemons Tera type, or what the Pokemon is in general.

A weak Pokemon: This may seem weird, but there is a specific instance where bringing a weak Pokemon may be your best option: Ditto. Provided YOU are the one who finds a ditto raid, if it has the ability Imposter, it will immediately transform into the host of the raids Pokemon. If YOU find the Ditto, YOU are the host of the raid. Regardless of the Dittos level, it will copy the stats of whatever Pokemon you bring. Therefore, if you bring a weak Pokemon, you will easily be able to beat 5 and 6 star Ditto.

Pokemon with Reflect/Light Screen: Depending on the Pokemon you are about to fight, having someone with a Pokemon with Light Screen or Reflect would be a good idea. If you are fighting a Pokemon with all or mostly special moves, Blissey is a great option to bring because you will be tanking the special moves the raid Pokemon throws at you and Blissey also learns Light screen, sharing the defenses against the raid Pokemon's attacks. If you want a Pokemon with both screens, a Grimmsnarl may be a good option, as it learns both Light Screen and Reflect, and if you get one with the ability Prankster, it will be able to set up Light Screen or Reflect before the raid Pokemon gets to attack, regardless of if it is tera Dark or not. Any status moves from the Grimmsnarl that directly target a tera Dark mon won't work, though.
